Apex Brand Collection is an Idaho-based hospitality group founded by restaurateur Scott Slater — best known for launching the iconic Slater’s 50/50 and now focused on building bold, original dining experiences across the West.

We don’t follow formulas. Every Apex concept is created from scratch — with obsessive attention to flavor, design, service, and storytelling. Our restaurants aren’t just places to eat — they’re places to gather, connect, and feel at home.

Our current collection includes:

  • Hemlock – A modern steakhouse redefining fine dining in downtown Boise, focused on Idaho beef, dry-aging, and seasonal innovation.

  • Understory – A cocktail-first venue for intimate events, ambient drinks, and refined hospitality.

  • Spitfire Tacos + Tequila – Serving “authentically made inauthentic tacos” and a serious agave collection, with multiple Idaho locations — including our flagship in downtown Eagle and a vibrant lakeside outpost in McCall.

  • Earlybird Breakfast Burritos – A fast-casual burrito counter turning breakfast into a full-flavored ritual, built for mornings on the move.
